The distinction sounds like marketing and is not. An assistant is something you use. You open it, you ask, you read the answer, you decide what to do next, and the loop closes on you every time. That is genuinely valuable, and ChatGPT is the best version of it.
An employee is something you delegate to. You describe the outcome once, and the next thing that happens is finished work arriving, or a question arriving because it hit something it should not decide alone. Your attention is spent on the two ends rather than on every step in the middle.
The test is simple. Count how many times a week you paste something from one window into another and think "I am the integration here". That number is what changes.
But honestly. Delegation only pays when the job is worth describing properly. For a one-off question, opening ChatGPT and asking is faster than briefing anybody, and it always will be.
These are different pricing shapes and each one is better in a different place. ChatGPT Business charges per person, because every person gets something. Tenfold charges per company, because the thing being bought is capacity, and capacity does not care how many people are watching it.
Do the arithmetic on your own team rather than on ours. At eight people, ChatGPT Business on the monthly rate is $200 against our $299. At thirty it is $750 against our $799. The crossover is real and it is further out than we would like.
What moves the answer is not headcount, it is how much work you want running without a person attached to it. If the answer is "some, occasionally", seats are the cheaper shape.
But honestly. On a small team where everyone wants a personal assistant rather than a shared workforce, per-seat is both cheaper and the better fit.
